I don't have too much time to post right now, but wanted to give a quick summary of how things have been going the last few days. The answer is good. Each day this gets easier and easier for me, and I think Tim would say the same thing. He seems less grumpy which is a great thing. :-) I made (yet another) recipe from 1,000 Vegan recipes on Tuesday, Quinoa with sauteed vegetables. (I think that's what it was called, I don't the the book with me right now) It looked strikingly like the millet dish I made last week, but actually tasted quite different. I would call this dish a huge success because both Tim and Meghan liked it. In fact, there was only a tiny bit left after dinner. Tim actually went back for thirds! Meghan discovered that she loved shelled edamame, as she picked out every last one from her serving and then asked for more. I had to pick those beans out quickly as she was eating them faster than I could serve her
Since we'd had so many one-dish meals lately, I decided to go with a more traditional meal last night with a main entree (chickpea medallions) and side dishes (wild and brown rice and roasted vegetables). This was my favorite vegan meal so far. I made a "cheezy" sauce (a recipe from one of my old favorites, Veganomicon) to go on top of the chickpea medallions and it was great. Tim was not a fan. I'm not sure if it was the texture that turned him off (more bready than meaty), or if they were a tad bit too dry as I may have overcooked them. Oops. It didn't bother me at all; I thought everything was delicious. He still ate everything on his plate, so I guess it was a successful meal nonetheless.
